Buckwheat and linseed bowl with blueberry powder

Ingredients for 1 portion:
- 100 g sprouted buckwheat
- 2 tbsp juice of an organic lemon
- 50 ml almond milk or other, possibly a little more - depending on the desired consistency
- 2 tbsp blueberry powder
- 2 tbsp freshly crushed linseed
- 1 tsp ground vanilla
- 1 pinch of sea salt - 2 tbsp date sweetener or agave syrup - choose fruit for topping according to season - here a little more. sea salt

- 1/2 banana

Banana, blackberries, fresh figs, blueberries, raspberries

Requires 24 hours preparation time if you sprout the buckwheat beforehand. The germination process potentiates the vitamins and 'liberates' the minerals. The buckwheat comes back to life and is bursting with strength.
Preparation:
Cover the buckwheat in a bowl with clear water and 1 tablespoon of lemon juice and leave to soak for approx. 24 hours.
Freshly grind the linseed just before using it again.
Drain the buckwheat with the soaking water through a fine kitchen sieve and rinse thoroughly under running water.
Puree the soaked buckwheat together with 1 tbsp lemon juice, almond milk, blueberry powder, vanilla, banana and date sweetener in a blender. Add almond milk to taste.
Then fold in the ground linseed. This also binds the mixture again.
Pour your buckwheat and blueberry porridge into a bowl and garnish with fresh fruit and/or nuts and seeds as desired.
