Blueberry cheesecake with blueberry powder

Ingredients for the base:
- 80 g rice flour
- 2 tbsp psyllium husks
- 100 g coconut blossom sugar
- 70 g coconut oil
- 170 ml plant-based drink (almond or oat)
- ½ tsp cinnamon
- 1 pinch of salt
Ingredients for the blueberry filling:
- 400 g cashews
- 250 ml coconut milk (can)
- 50 g maple or agave syrup
- 65 g coconut oil
- ½ tsp tonka bean grated or vanilla pulp
- 1 pinch of salt
- 150 g fresh blueberries (set aside 2 handfuls for decoration)
- 2 tbsp blueberry powder

Preparation of the cake base:

Soak the cashews in water overnight.

For the cake base, place all the dry ingredients in a bowl and make a well in the middle. Gently warm the coconut oil until it is liquid (do not heat!) and pour into the well with the plant-based drink. Mix with a wooden spoon from the inside out until a homogeneous mass is formed, then knead again briefly with the dough hook in the mixer to form a smooth dough. Wrap in cling film and place in the fridge for at least 30 minutes.

In the meantime, line the cake tin with baking paper and grease the sides with coconut oil and continue preparing your Baubeer Cheeesy filling.

Drain the soaked cashews in a sieve, place in a blender and puree together with the coconut oil, coconut milk, maple syrup, blueberry powder, tonka and salt to a smooth, creamy mixture.

Add the blueberries and blend again until there are no more lumps and chill the mixture while the base bakes.

Use your hands to spread the chilled mixture evenly over the base of the springform pan and raise the edges. This takes a little patience.

Then prick the base a few times with a fork and bake for approx. 15-20 minutes.

Leave the finished base to cool slightly on a cake rack and then pour in the blueberry filling and place in the freezer for at least 3 hours.

Decorate your cake as you wish and store in the fridge until ready to serve.

Decorations: fresh blueberries, strawberries, mint leaves, purple pansy flowers
