Chili-Lime Seasoning Sauce

Ingredients:
- 30 ml white vinegar, balsamic vinegar, or white wine vinegar
- 130 g *(vegetarian) fish sauce (available at Arche organic markets)
- 120 ml cold water
- 3 tbsp sugar
- 4 garlic cloves, very finely chopped
- Green & red chili peppers, finely chopped (amount to taste, depending on desired heat)
- 1 organic lime

- 120 ml cold water
- 3 tbsp sugar

- 1 organic lime
Preparation:
The preparation is incredibly simple.
First, squeeze the lime and mix the juice with the other ingredients. Then chop the remaining lime into small pieces and add it to the sauce as well.
Finally, transfer everything to a sealable jar and let it sit for at least 2 hours. It will keep in the refrigerator for at least 6 months.
Serving suggestion:
It goes great with anything that could use a little extra zing. For example, with grilled foods—whether vegetables, tofu/seitan, mushrooms, meat, or fish.
We also use it to jazz up pizza, pasta, potatoes, or soups. In our recipe, the seasoning sauce is used with tofu in a miso-lemon coating.
