CHIA Microgreens

CHIA microgreens are nutrient-rich, mildly tangy sprouts that you can grow yourself from chia seeds in 7–10 days. They’re simply grown on a damp surface (paper towels or soil). Since they become slimy when exposed to water, you should sow them in a shallow bowl.
They’re considered a superfood because they’re rich in omega-3 fatty acids, antioxidants, proteins, vitamins (A, B1, B3), calcium, zinc, and fiber.
For your chia microgreens, you’ll need:
• Growing: Since chia seeds are “slimy,” the ideal way to grow them is on a damp paper towel or in special seed-starting mix in a clay dish
• Sowing: Scatter the seeds thinly and evenly over the moist surface; DO NOT soak them beforehand, as they will stick together
• Care: Let them germinate covered in the dark for the first 24 hours, then place them in a bright spot, such as a windowsill, but avoid direct sunlight, otherwise they’ll dry out quickly. Spray them with water twice a day
• Harvest: Germination takes about 7–10 days; depending on the height of the seedlings, you can harvest them using scissors
• Consumption: Chia seeds have a nutty to spicy flavor and are great as a topping on salads, smoothie bowls, in smoothies, and on bread—for example, with avocado and an egg
