Herb and Spice Salt with Lovage

Difficulty level: easy


Ingredients for about 350 g of herb salt:
- 250 g coarse sea salt or rock salt
- 100 g fresh herbs, such as lovage (leaves and tender stems), ground elder, nettle tips, wild garlic (depending on the season), marjoram, and thyme

Salt is excellent for preserving the aromatic flavor of herbs.

In this recipe, the aroma of lovage—also known as “Maggi herb”—is the main herb.

We’ll mix in a few other complementary herbs: ground elder, nettle tips, wild garlic, marjoram, and thyme.

Of course, some herbs are available fresh almost until the start of winter, while others are only available in the spring or summer.

This offers a wonderful way to preserve them naturally with salt. This method works for all herbs that are in season for only a short time.

You’ll need a large, clean screw-top jar or several small ones, as well as labels or glass markers.

Kitchen Tip:

This aromatic seasoned salt is especially good for seasoning soups, vegetable stews, sauces, or savory salads.

Harvesting Tips:

Don’t pick the herbs in the morning dew; it’s better to do so in the morning when the herbs are completely dry.

The flavor of most herbs diminishes once they bloom, so it’s best to harvest your herbs before they flower.

Exceptions include marjoram, mugwort, and lavender—their aroma comes from the flowers.
