Peppery cauliflower with feta cheese and sriracha sauce

Ingredients for the cauliflower, 2-4 portions:
- 1 head of cauliflower without leaves
- 4 tbsp olive oil
- 2 garlic cloves
- 1 tsp turmeric
- 1 tsp ground cumin
- 1/2 tsp tandoori
- 1 pinch allspice
- 1 tsp fleur de sel
For the feta cheese sauce:
- 150 g feta cheese
- 1/2 tsp lemon juice
- 2 tsp maple syrup
- 2 tbsp olive oil
- 75 ml cold water
- 1-2 tbsp Sriracha sauce hot
Decoration:
- Lettuce leaves e.g. baby chard, sesame seeds and sprouts
- 1 head of cauliflower without leaves

For this recipe, we first cooked the whole cauliflower in a little water and then roasted it in the oven with oriental spices and olive oil.
A sauce made from feta cheese, crème fraîche, lemon juice, maple syrup and sriracha sauce goes perfectly with it. This is how we present a good old home-cooked vegetable roasted in an upbeat oriental style!
Preparation of cauliflower:
Preheat the oven to 220 degrees top/bottom heat.
Remove the leaves from the cauliflower, cut off the stalk and clean under running water.
Bring to the boil in a large pan of water and cook over a medium heat for approx. 10 minutes.
Then drain well in a colander and pat dry with kitchen paper.
Line a baking tray with baking paper and place the cauliflower in the middle.
Mix 4 tbsp olive oil with the turmeric, cumin, tandoori and allspice in a small bowl.
Coat the cauliflower all over with the oil and spice mixture and sprinkle with sea salt.
Bake the cauliflower in the middle of the oven for approx. 40-45 minutes. It is ready when it is nicely golden-brown roasted.
For the feta cheese sauce:
Crush the garlic cloves, puree the feta cheese with the other ingredients - except Sriracha - using a hand blender or food processor to make a creamy sauce and season to taste.
Serve:
Lay out the lettuce leaves on a large plate, place the cauliflower on top, pour over the sheep's cheese sauce, spread the Sriracha sauce evenly on top and sprinkle with sesame seeds and sprouts.
