Here’s a quick and easy recipe for homemade energy balls. They’re perfect as a healthy snack between meals, packed with energy, and best of all, they don’t require any baking.
Preparation:
Cook the pumpkin pieces until tender, about 15 minutes, then let them cool.
Drain the chickpeas well, then puree all the ingredients in a food processor until everything is well combined.
If the mixture is too thick, add a little more nut butter. If it’s too runny, add some pumpkin protein powder.
Spoon the mixture into a bowl and refrigerate for about 20 minutes.
In the meantime, melt the chocolate with a dab of coconut oil in a double boiler.
Using two teaspoons, shape the pumpkin mixture into balls, dip them in the chocolate, and decorate with your choice of toppings.
It’s best to place parchment paper underneath and let the chocolate set.
The balls will keep for about 1 week in an airtight container in the refrigerator.
