The Germans and Celts used barley as food as well as for therapeutic purposes. Barley grass was also used by the Sumerians, the Mayans, and the Chinese. Barley grass is characterized by a high nutrient density. It is rich in potassium, iron, calcium, vitamin C and chlorophyll, and has a high fiber content of fiber.
